Plum cake - a must-have for the plum season

This damson cake is a little healthier than than the usual one, but just as delicious no industrial sugar will be needed and butter has been replaced by the healthier coconut fat.


You need:

  • 200ml milk

  • 50g coconut fat

  • 375g spelt flour

  • 1 package dry yeast

  • 30g coconut sugar or agave syrup

  • 1 tbsp linseed

  • 1 tsp salt


  • 1 kg plums


Preparation:

  1. Heat 200ml (plant based) milk in a pot

  2. melt 50g coconut fat within the milk

  3. mix 375g spelt flour and 1 package dry yeast

  4. add 30g coconut sugar or agave syrup

  5. add 1tbsp linseed and 1tsp salt • mix everything untill smooth

  6. let it rest in a warm place

  7. knead and roll out on a floured surface

  8. put the dough into the baking pan

  9. remove the stones of 1kg plums and cut twice

  10. arrange the dansons on the cake

  11. bake at 200°C (upper/lower heat) for about 25min ⠀⠀ Serve hot and preferably with vanilla ice cream
