Vegetarian bolognese with pasta- my favourite meal the day before competition

What do you prefer to eat the day before the competition? I prefer pasta - as you would expect.

For two portions you will need:

  • 150g soja nets

  • 400ml vegetable sock

  • 2 onions

  • some garlic

  • oil

  • 300g tomatoes

  • vegetables of your choice

  • salt & peper

  • fresh herbs

  • pasta

Vegetarian Bolognese:

  1. Swell 150g of soya nets with 200ml of vegetable stock for 10-15min

  2. chop 2 onions and a clove of garlic and fry in a pan with a little oil for 3min

  3. add the soya and fry until golden brown

  4. add 300g tomatoes and other vegetables of your choice

  5. deglaze everything with 200ml vegetable stock

  6. simmer for 10-15min

  7. season with fresh herbs and pepper & salt

  8. you prepare the pasta as usual
